MarvinSketch apparently doesn't, by default, conform with the ACS style of drawing so I'm wondering how can I get it to do so.

Please select 'File>Document Style' from the menu and you will get the following popup:
Here you should click on the 'Apply changes for all the atoms / bonds' radio button and select the desired pre-designed document format from the 'Loading of a Journal Style' popup. Click 'OK' and these settings will be used after that.
